The secret, says owner Thomas Boggs, is that very few restaurants serve a burger fully dressed as ordered. “You don’t have to doctor it all, so as a rule it’s going to be hotter,” says Boggs. “Plus, we still cook it to order: You can do it medium rare to a well done. And I think a flat grilled burger, as opposed to a charcoal burger, keeps the juices in better.”
Combine that juicy burger with live music on Sundays, and there’s little wonder that readers equate Huey’s with hamburger heaven.
